An original way to use salmon for a quick and easy dinner, full of nutrients, colour and flavour. New Zealand salmon is full of Omega 3, known for supporting brain health amongst many benefits. INGREDIENTS: - 4 salmon loins, skin removed - 4 slices of streaky bacon - 2 tbsp coconut sugar - 4 medium-sized orange kumara - extra virgin olive oil - 1 tbsp smoked paprika - salad mix METHOD: 1. Roll the salmon loins and wrap each of them with a slice of streaky bacon. Use a skewer to secure the bacon and ensure the loins keep their shape when cooking. 2. Place the prepared salmon loins in a frying pan and sprinkle some coconut sugar over them before frying them until the sugar has caramelised and the salmon is cooked through. Make sure you brown the bacon. 3. Chop the kumara into fries or thin wedges and place them in an oven tray lined with greaseproof paper. Drizzle with olive oil and sprinkle with paprika. Bake for 20 to 30 minutes at 180 degrees until cooked through. [Note: You can prepare the kumara before working on the salmon to maximise your time.] 4.
