A gluten free alternative to the traditional mudcake, this recipe doesn’t compromise on texture or flavour with the use of ground almonds and macadamia oil giving this cake a beautiful nutty flavour. INGREDIENTS: - 2 ½ cups ground almonds (we love Alison's Pantry) - ¾ cup cocoa powder - 3 free range eggs (we love Woodland) - ½ cup caster sugar - ¼ cup maple syrup - 2 tsp vanilla extract - ¼ cup milk - ¼ cup macadamia nut oil (we love Olivado) - fresh berries METHOD: 1. In a large bowl, mix the ground almonds and cocoa powder. Set aside. 2. In a separate bowl, whisk together eggs, caster sugar, maple syrup, vanilla extract, milk and macadamia oil. Pour over the dry mixture and stir until well mixed. 3. Pour the mixture in a cake tin lined with baking paper and bake at 160°C for 40-45 minutes. 4. Finish with some cocoa powder and fresh berries.
