Recipe: Bacon, Sweet Stem Broccolini & Potato Fritters00:59|BRANDED
These fritters are a show stopping, delicious breakfast alternative. The broccoli can be replaced by cauliflower or other leafy greens. INGREDIENTS: For the fritters - 500g potato, grated and drained out the excess moisture - 6 rashers streaky bacon, chopped - 6 stalks of sweet stem broccolini, cut into small pieces - ½ small onion, chopped - 1 egg - 1 sprig rosemary, leaves chopped - a handful sage, chopped - ½ cup plain flour - 1 teaspoon garlic powder - salt - pepper - avocado cooking oil To serve - 4 tbsp ricotta - 4 tbsp relish of your choice METHOD: 1. Fry the bacon with a drizzle of avocado cooking oil in a frying pan over medium to high heat for 1-2 minutes. 2. Add the onion, broccolini, rosemary, sage and garlic powder. Continue to stir fry for a further 2-3 minutes until the vegetables are soft. Set aside to cool slightly. 3. In a large mixing bowl, mix the grated potato, bacon & vegetable mixture, egg, salt and pepper. Add the flour and combine well. 4. Heat a generous drizzle of oil in a frying pan over medium hot heat. Spoon in the fritter mixtures. Cook for 4-5 minutes each side or until cooked through, crisp outside and golden. 5. Serve immediately with ricotta and relish.
