INGREDIENTS: - 3 boneless chicken thighs - 3 tablespoons of dark soy sauce - 2 tablespoons of Shao Xing Wine (or cooking wine) - 2 diced scallions - 2 tablespoons dried shrimp (softened in water) - 6 diced dried Shiitake mushrooms (softened in water) - 2 diced chinese sausages - Cooking wine - 2 tablespoons of soy sauce - 2 cups of short grain white rice (cooked) - 1 cup of chicken broth METHOD: 1. Add chicken in to large mixing bowlAdd dark soy sauce, shao xing wine, mix well.Heat frying pan with oil to medium-high heat, brown both sides of chicken and remove.Place skin down in large mixing bowl to line each side as shown. 2. Add oil to frying pan.Add scallions, dried shrimp, dried mushrooms, and sausage. Gently stir.Add cooking wine, soy sauce, white rice, and chicken broth. Gently stir and mix appropriately. 3. Add rice into mixing bowl with cooked chicken as shown.Steam for 45 minutes. Let it rest for 5 minutes.Flip mixing bowl over onto large serving plate. Garnish and enjoy. Nom Nom.
